                <head>DESCRIPTION OF THE MILK TREE IN SOUTH<lb break="yes"/>AMERICA.</head>
                <lb break="yes"/>
                <p>M. Humboldt and his companions, in<lb break="yes"/>the course of their travels, heard an ac-<lb break="no"/>count of a tree which grows in the valleys<lb break="yes"/>of Aragua, the juice of which is a nour-<lb break="no"/>ishing milk, and which, from that circum-<lb break="no"/>stance, has received the appellation of the<lb break="yes"/>
                    <hi rendition="#i">Cow Tree.</hi>
                </p>
                <lb break="yes"/>
                <p>The tree, in its general aspect, resem-<lb break="no"/>bles the chrysophyllum cainito; its leaves<lb break="yes"/>are oblong, pointed, and alternately mark-<lb break="no"/>ed with lateral veins, projecting down-<lb break="no" />wards, they are parallel, and are ten<lb break="yes"/>inches long. When incisions are made<lb break="yes"/>into the trunk, it discharges copiously a<lb break="yes"/>glutinous milk, moderately thick, without<lb break="yes"/>any acridness, and exhaling an agreeable<lb break="yes"/>balsamic odour. The travellers drank<lb break="yes"/>considerable quantities of it, without ex-<lb break="no"/>periencing any injurious effects; its vis-<lb break="no"/>cidity only rendering it rather unplea-<lb break="no"/>sant. When this fluid is exposed to the<lb break="yes"/>air, perhaps in consequence of the absorp-<lb break="no" />tion of the oxygen of the atmosphere, its<lb break="yes"/>surface becomes covered with membranes<lb break="yes"/>of a substance that appears to be of a<lb break="yes"/>decided animal nature, yellowish, thready,<lb break="yes"/>and of a cheesy consistence. These mem-<lb break="no"/>branes, when separated from the more<lb break="yes"/>aqueous part of the fluid, are almost as<lb break="yes" />elastic as caoutchouc, but at the same time<lb break="yes"/>they very soon become putrid.</p>
                <lb break="yes"/>
                <p>The natives give the name of cheese to<lb break="yes"/>the coagulum which is separated by the<lb break="yes"/>contact of the air, in the course of five or<lb break="yes"/>six days it becomes sour. The milk, kept<lb break="yes"/>for some time in a corked phial, had de-<lb break="no"/>posited a little coagulum, and still exhaled<lb break="yes"/>its balsamic smell. If the recent juice be<lb break="yes"/>mixed with cold water, the coagulum is<lb break="yes"/>formed in a small quantity only; but the<lb break="yes"/>separating of the viscid membranes occurs<lb break="yes"/>when it is placed in contact with nitric<lb break="yes"/>acid. This remarkable tree seems to be<lb break="yes"/>peculiar to the Cordiliere du Littoral, par-<lb break="no"/>ticularly from Barbula to the lake of Mar-<lb break="no"/>acaybo. There are likewise some traces<lb break="yes"/>of it near the village of San Mateo; and,<lb break="yes" />according to the account of M. Bredmeyer<lb break="yes"/>in the valley of Caucagua, three days&#x2019;<lb break="yes"/>journey to the east of the Caraccas. This<lb break="yes"/>naturalist has likewise described the vege-<lb break="no"/>table milk of the Cow-tree as possessing<lb break="yes"/>an agreeable flavour, and an aromatic<lb break="yes"/>odour; the natives of Caucagua call it<lb break="yes"/>the <hi rendition="#i">milk tree.</hi>
                    <hi rendition="#et">H. B.</hi>
                </p>
